Broccoli and Cheese Soup

1L broccoli florets
1L chicken broth
500mL milk
15mL dried minced onions
5mL minced garlic
3mL black pepper
5-6 slices of American cheese singles
250mL extra sharp cheddar cheese
approx 30mL corn starch

Heat chicken broth, milk, broccoli, onions, garlic, pepper, and cheeses until broccoli is tender. Pour a small amount of the soup (no broccoli) into a mug and mix with corn starch until smooth. Pour corn starch mixture into soup while stirring constantly until soup thickens.

If desired garnish with shredded cheddar cheese, green onions, and sprig of parsley. Serve with crackers.

Goulash

This is something my grandparents and father make. I learned how to make it from my dad.

stewing beef, cubed
1-2 onions, chopped
1/2 tsp garlic
2 tbsp paprika
1 28oz can crushed tomatoes
2 32oz cartons chicken broth
4 medium potatoes, peeled and cubed
4 eggs, flour (for dumplings)

Sauté beef cubes with oil until browned, add onions and cook until translucent. Add garlic, paprika, can of crushed tomatoes, chicken broth, potatoes, and salt to taste.

To make dumplings, beat eggs, and add flour until a sticky dough is formed. Drop table-spoon sized dumplings into boiling goulash.
